Quick & easy soup to create with leftovers from the fridge!
Recipe type: Soup
  • 2 tomatoes
  • 6 mushrooms (the cup type)
  • ½ punnet cherry tomatoes
  • 1 cup baby spinach leaves
  • ¼ punch fresh parsley
  • sprinkle of dried thyme
  • salt and pepper to taste
  1. Place all ingredients together in 1 medium sized pot
  2. Cover all vegetables with water and bring to the boil on the stovetop
  3. Once water has started to boil, turn temperature down to a simmer for 45-60 mins
  4. Blend until smooth using a stick blender
  5. Serve hot!
