A simple and easy to make beef stir fry - you can easily substitute the beef for any other protein you desire (eg chicken, fish, tofu etc)
Recipe type: Dinner

  • 1 tablespoon coconut oil
  • 1 brown onion - diced
  • 4 tablespoons coconut peanut butter (I used Mayver's brand)
  • Tamari and salt to taste
  • A dash of coconut milk (I used Coco quench)
  • Beef strips
  • Any stir fry vegetables - I used cabbage, snow peas and mushrooms
  1. Fry onion in oil for 3-5 mins in a fry pan or wok
  2. Add beef strips, tamari, salt and 4 tablespoons of coconut peanut butter plus a few splashes of coconut milk and keep stirring
  3. Stir fry until beef strips are cooked through - you should have a beautiful thick sauce that bubbles away while you cook the beef
  4. Then add whatever veggies you desire such as cabbage, snow peas and mushrooms and toss to combine
  5. Serve with rice or quinoa or if you're grain free simply add more veggies and serve as is (other vegetables could include carrots, capsicum, beans, snap peas, bok choy etc)
