Healthy Banana Walnut Muffins

What do you do when you have 4 very overripe bananas taking up space in your fruit bowl? Turn them into banana muffins with this super quick and easy recipe:

Healthy Banana Walnut Muffins

Serves: 12 muffins
Grain free, gluten free, dairy free, refined sugar free, paleo and low-carb – these muffins do actually taste good, I promise 🙂
Ingredients
  • 4 ripe bananas
  • 1/2 cup of nut butter (I used Brazil & Linseed as that’s what I had in the cupboard, but you can use almond, cashew or any other type except peanut butter)
  • 4 eggs
  • 2 tablespoons olive oil
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • pinch of salt
Instructions
  1. Preheat oven to 180 degrees C
  2. Line a muffin tin with 12 greased muffin cups
  3. Into a high speed blender or food processor, place bananas, nut butter, eggs, olive oil and vanilla extract – blend until mixture is combined and resembles a thick batter
  4. Pour batter into a large bowl and add coconut flour, cinnamon, baking powder and salt – mix well to avoid coconut flour clumping together in mixture
  5. Spoon batter into muffin cups using a spoon – each cup should hold 1-2 tbsp of the mixture
  6. Place 1 walnut on top of every muffin for decoration & an extra nutty crunch
  7. Bake in oven for 20-25 minutes and serve warm – or keep for up to 5 days
