Quick & easy soup to create with leftovers from the fridge!
Ingredients
- 2 tomatoes
- 6 mushrooms (the cup type)
- 1/2 punnet cherry tomatoes
- 1 cup baby spinach leaves
- 1/4 punch fresh parsley
- sprinkle of dried thyme
- salt and pepper to taste
Instructions
- Place all ingredients together in 1 medium sized pot
- Cover all vegetables with water and bring to the boil on the stovetop
- Once water has started to boil, turn temperature down to a simmer for 45-60 mins
- Blend until smooth using a stick blender
- Serve hot!
